I won't talk about the super production level. I want to say that the work does not contain exciting twists, nor mystery, nor even an interesting goal. But I still enjoyed watching it.Once I see the characters move or talk I find myself enjoying watching. Is there any logical explanation for this?

Such a dumb statement. Apparently, you're the one in charge of deciding what the genre of a series should be. Nana is a shoujo and will always be a shoujo. It doesn't matter if you think it should be josei. The targeted audience of Nana is teenage girls, so it's a shoujo series. Frieren, Chainsaw Man, and Attack on Titan are also shounen, regardless of what people think. Their main audience is, in fact, teenage boys, despite the gory content. Some people just can't accept that their favorite series is a shounen or a shoujo because they want to be seen as more mature.

Also personal opinion Apothecary diaries was better that season and I’m not afraid to state my opinion. Frieren might be better version of Kino’s journey though :( but I also hate Stark and Fern screentime so idk :/

Second of all, subgenre is a completely different concept. A subgenre is a more specific category within a genre. With all that said, authors don't just roll the dice. Understanding demographics is important not only for promoting your story and boosting sales but also for shaping the narrative throughout the writing process and crafting a story that resonates with the right audience.

A show doesn't need plot twists or a mystery to be good. I think going on a 10 year trip to talk to Himmel in heaven is an interesting goal, but ultimately it's about Frieren building deeper connections with humans after living in seclusion for centuries.

Maybe it just suits your taste. However it could also be that this series feels like a breath of fresh air since it's a fantasy adventure about finding your passed loved ones instead of defeating the demon king. Generally Frieren is very good because of it's commitment to honest, genuine storytelling that conveys lessons to the audience without the feeling of being talked down to. Also YEAH the production quality is arguably the best of all time.

I think having a more focused, engaging plot that added a level of tension and urgency to the show would’ve made it better to watch. But honestly, that might be one of the only gripes I have with the show

I was a little weirded out by how spontaneous it goes between time jumps in the first two episodes before the rest of the show takes place in a more straightforward progression of events (interjected with a flashback or two in each episode but after enough times, that just becomes ‘the show’ and stops feeling confusing)

To answer your question, I think it's because it's something different.

Far too many stories focus on the journey to defeat the "big bad," but rarely does one tell a story that revolves around the world after which the hero saved the world.

Elves in stories being alive longer than humans is nothing new. We've always known this, yet a few stories have utilized this concept as a major theme and so well.

From the first episode, we get a sense of world building through effective use of timeskips. From Himmel, being young to Himmel growing old in a single episode highlights just how Friren feels. To her and to us that journey which took 10 years was merely just a short moment.

I could go on and on about this show and its manga, but I will leave that for you to read its source material instead because I think it's incredibly worth it.
