Grave of the Fireflies easily takes the cake for me, I'm not a huge fan of absurdist writing and I absolutely love the concepts of this movie and their contrast.

Grave of the Fireflies is the only Ghibli film I‘ve seen, so it wins by default.

Castle in the Sky, though Princess Mononoke is almost neck-and-neck with it.
Studio Ghibli transcends the moniker of "anime."

Nausicäa is just awesome but I enjoyed Only Yesterday the most. It was very relaxing and uplifting. In my opinion it is also the most beatifully drawn movie from Ghibli.
I highly recommend it.

Depends if you count Nausicaä because technically Ghibli didn't yet exist back then. But I really like the uniqueness of the setting and the relationship between humans and the strange ecosystem in that one.

If you don't count it then my next best pick would be Porco Rosso. It just exudes a certain kind of nostalgic atmosphere reminiscent of the old French and Italian movies I grew up with (think of Bud Spencer or Louis de Funès).

It depends really. I suppose my top three would be:
1) Princess Mononoke
2) Howls Moving Castle
3) Graveyard of the Fireflies

But tbh I could swap them around and add in different ones depending on when you ask me.

pocco rocco, its about a pig who can fly a plane and acts as paid security in the Mediterranean during the 1930's, has to be the most charming anime movie I've ever watched, I felt nostalgic and I've never even watched it before
