Chaos;Head and Fate/Stay Night both suffer from weak anime adaptations of otherwise pretty good visual novels, both of which I have played and compared them to the awful anime adaptations. I think Chaos;Head is too long to be worth reading the VN for, but if you're into VNs, F/SN would be worth reading among other great visual novels.
I see you like Urobuchi to. He wrote the LN of F/Z(Which the anime was based off of) AND the script for the second season.
Also, if you plan on trying any other of TYPE-MOON's(Creators of Fate and lots of other great stuff), I'll go ahead and tell you in advance the Tsukihime anime sucks.....so much it does not exist.....go read the manga instead.
No hate or anything, but the visual novel is fuller, better written, and contains the original story, Unlimited Blade Works, and a final route 'Heaven's Feel' to complete the story.
Try Fate/Zero, it's a MUCH anime compared to Fate/Stay Night. The difference is practically night and day.
You see, Studio DEEN is really good at butching great visual novels. Look at FSN& Umineko for example.
I suggest you try out Fate/Zero, the prequel to FSN. It is one of the reasons as to why Fate is awesome. It is also a faithful adaption, unlike FSN's anime adaption.
So, just forget the FSN anime exists. Most of us do sicne it was so bad.
