Of course, this list is subjective, but these are mangas that really stood out to me due to refreshing story elements, subject matter, or unique characters. I'm not asking for reccomendations.

These manga feature girls and women in the Taishō period (1912-1926). The aesthetic is a mix of Western and Japanese as Japan rapidly modernizes.

These are manga about "maidens" so I will leave things like Golden Kamuy and Demon Slayer for another list, even though they are firmly set in the Taishō period.

With gratitude for contributions from kihel.

They would have gotten away with it too, If it weren't for these meddling protagonists.

A list of manga about solving a big mystery, solving individual cases that are unrelated to each other or solving individual cases which are linked to solving a bigger mystery.

The mysteries solved are either a mystery to both the protagonist and the reader or just the protagonist with the reader knowing most of what's going on, it may also be a mystery to whoever is trying to solve the mystery which could be supporting characters or the protagonists antagonist.

MC is the only one with a certain special ability, be it stealing luck, talking to mechanical parts, seeing into the future, seeing people's tax evasion debts, reading people's minds etc.

Except Rescue System, there's no such thing as levelling up and constantly gaining new abilities, levels, equipment and such.
Rescue System still feels somewhat in between all the rest and power fantasy because it still has the firefighter setting and missions that essentially resemble the real life ones.
Rojiura Brothers: he isn't the only one.

Manga about protagonists that's lives changed for the better due to a change in how they see the world, themselves and those around them, though there are some that must go through hardships before they are able to change.

The change in these protagonists aren't instant and some of the included protagonists take a long time to change or just have a more natural gradual change that is more apparent once you have gotten further into the story.

While it might look like you don't really need to know all of this, you never know when it will be useful: for instance with quizzes, random questions that you wouldn't know the answer to otherwise, fun facts to tell someone else, or if there's trouble or necessity of intervention in your vicinity.

Honorable mentions:
-Apocalypse no Toride is a horror manga that could be included due to a couple of educational parts, such as acute hypoglycemia (low blood sugar) and its effects induced by intravenous insulin injections; however a lot of it is not really fitting to be put in here.
-Genius Martial Arts Trainer (MAL ID 170657): Fitness

A guide for anyone looking to explore more modern shoujo and not knowing where to start and optimized for variety.

This stack includes shoujo that began in 2010-2019 categorized by genre in order to cover a multitude of subjects and feature diverse stories. I tried to feature many popular and influential series that might be useful for exploring the demographic, with a few lesser known ones to add to the genre diversity.

The genres are sorted as follows:

High School Romance
Fantasy and Supernatural
Queer Series
Historical
Romcoms and Comedy
Trashy Series of Ill Repute
Isekai
Heavy Drama and Darker Themes
Episodic Slice of Life and Career Oriented stories

Here is a list of mangas that should appeal to old farts like me, who are too old to find fun in shonen characters getting stronger, cliché fantasy or in vanilla school romance tropes.
The main drive is that the manga should have some personality, with decent and properly written characters, laid-back humor, an interesting context and / or a subtle story. Good art and page layout are also appreciated. No violence porn or excessive fan service either, I like authors to focus on something else than these simple devices, although I'm not against them at very small doses when they serve the story. The manga may have been adapted in anime or not, I only address the mangas here.
There are probably some spoilers in my comments so skip them if you're worried about that.

The Meiji and Taisho eras spanned from 1868 to 1926, a period of modernization for Japan. When after 250+ years of self-imposed isolation (Sakoku), Japan came into contact with Western culture and got inspired by it. This period combines Japanese traditional culture with 19th century and early 20th century Western culture.

I made this list because I'm tired of people generalizing shoujo and saying it's all romance, so here are some shoujo manga from varius genres (horror, psychological, action, drama, etc.) that are violent and dark! Check the trigger warnings for some of these.

mind readers! every title on this stack has a primary character that can perform a version of mind reading/telepathy, either through physical contact or by being within the radius of another person. emotion-sensing, hearing of an 'inner voice', ability to tell if someone is lying, or any other miscellaneous readings or revealing of another person's self will also be accepted.

(updating!!)

not on MAL:
Villain to the Rescue by Mu Huoran & Yun Zhong
'A proper villain must be ruthless and evil, a bringer of death! Having tormented the protagonist to his heart's content, he makes a brilliant exit. Once he's finished his work, he goes out with a bang. Wang Yi was determined to be that kind of villain. Unfortunately… His male lead can read minds. (:з)∠*) “You mongrel!” Mr. Yi chuckled as he looked down on the novel’s male lead. Suddenly, a thought bubble filled with cute emojis (⁄ ⁄ ⁄ω⁄ ⁄ ⁄) and the words “You’re so cute…” appeared in front of Qin.'
