While all of them had the same level, their stats were different and their own personal skills. Sunraku has really good reflexes.
And lastly, that lvl 150 boss is not just the samurai. It includes his horse too. So it is quite realistic that without his horse Sunraku can match him with a dozen deaths.

Even if you are Level 1 against a Level 150 boss, you can beat it if you are skilled enough. Leveling yourself up will still always be useful, to get more stat, upgrading heavily your chances of winning (and reducing the time to).

Everything was pretty realist here, my only complain would be that they succeeded in their first try, which definitely seems still a little abused, even with all their busted items. (Maybe doing dry runs to see the patterns of the boss would have been better.)

Like others mentioned even in souls like games you can beat any boss without leveling up, but you have to be really good and it takes a long time. In this game they literally made the boss unbeatable in the first 20 minutes and they did die several times.
