I feel like this must've been discussed in other Doraemon canon, but why would Sewashi help out Nobita, especially when it means he'll disappear? There's no way Nobita marrying someone else won't make Sewashi disappear/cease to exist right? It just seems super clear from the first 5 minutes

Just look the other way with this kind of plot (Doraemon's in general), the movie is beautiful, besides some, as you said, plot holes (typical and acceptable ones in my opinion)

This plot hole bothered me the whole film and I was waiting for it to be addressed. It's just an obvious issue... I guess other Doraemon canon hasn't addressed it then

Oh haha I didn't remember anything about plot holes. I guess my confusion just went away watching them reunited once again in a pretty film.

This question can be answered by parallel world theory.
But the more important point is this kind of thing is not unusual in Doraemon franchise, there are many them because they played with time travel and parallel world a lot. And you spoke "canon", I am not sure if that is even a thing in the franchise lol.

I only watched the first anime episode, that too dubbed in Hindi. Iirc Sewashi just told Nobita not to worry too much about time travel, right?
Either way, I should probably rewatch the first episode. It's been too long.

It's not a plot hole, it's confirmed outside the movie that if nobita got married to jaiko, their son will get married to shizuka's daughter but if nobita got married to shizuka instead their son will get married to jaiko's daughter
