In my opinion Samsung, LG and Dell are the only options when it comes to choosing a good monitor.
Did you ever work with 27" 1080p? The pixels are very large, this is not the best choice, trust me.

250GB. More than enough for OS.
I have M.2 SSD in my notebook, and also I use Intel Optane M.2 cache on my main PC to speed up the system HDD. I didn't have any problems with any of them so far. The speed of programs loading and OS start up is significantly better than with plain HDD.

No, I don't have that feeling, but I think I know what you mean. The thing about Chinese cartoons is a MAL issue, they just didn't pay enough attention to them past years, and started doing it only now. I have to agree though, that there are much more 3-minute-length anime than there were 5 years ago.
SSD: go for a Samsung EVO, don't buy PRO versions. One thing you should know about is that SSDs can heat a lot sometimes, so make sure that your PC is well-ventilated. I'm talking about M.2 SSDs, I don't know anything about 2.5" SSDs, maybe it's another matter for them.
