Contains some spoilers for both Fate Zero and Fate Stay Night inside
Story : 5 if you havent seen Fate route , 8 if you have seen Fate route
I blame it on Fate Stay Night overall being a Visual Novel.
I personally felt Ufotable tried to make to make it better , as seen in the Caster's Master scene (it wasnt in the VN) as well as to appeal to new viewers. But overall, if you dont know the Fate system and background story enough, you'll be hell confused . This anime should be watched after Playing the Fate route of the Visual Novel, and

watching Fate Zero. (Yes after Zero) Or else you'll really miss out alot of references . Such as we wouldnt know the true power of Ea (we would have thought it was just some powerful sword, not some OP cheat weapon ) , we would have no friggin idea who Saber was (until she fired off Excalibur in Episode 24) and a lack of character development (Rider died so easily, we didnt even know who she was unless you played the VN or watched Fate Route) Overall , Fate is still a VN style. You really got to watch/ play Fate route first at the very least, or youll feel super disappointed with the UBW anime for their lack of reasons and explaination .
However, if you have watched Fate or Fate/Zero , this anime would be full of nostalgia for you, and you may be able to follow the story better

Ufotable has once again done a great job with their animation, which makes me wonder... just how high was their budget. Great art, truly.
Sound : 8
Nice soundtrack to bring and heighten the mood during the fight scenes, relaxing soundtrack during mundane and daily scenes. It loses to Fate/Zero though...
Character. 5 if you havent watched Fate, 8 if you have.
Quite abit of backstories . But a lack of character development for a few characters (you need to watch Fate to truly appreciate Unlimited Blade Works)
