I'll try to review with fewest spoilers as possible. Also please note that I'm reading the manga release by release.
Akatsuki no yona's anime is good, but barely covers what would be the introduction to the actual story. We barely even reached the actual trigger to the story. Most people are familiar with the Movie/Books ''Lord of the rings''. Well it's as if all they did was doing the movie until they arrived to the elves city (Rivendell), but before forming the fellowship of the ring. So I understand that for anime only people, the anime seem to have no purpose or character evolution. But trust

me, in the manga, we do get there. Studio Pierrot, who produced the anime, never officially ''dropped'' the anime, but they are too busy with money wrecker such as naruto/boruto to care about the gem that akatsuki no yona is.
The anime rendered very well the part it covered, and I looooved the seiyus voice acting, they all are great, suits their characters super well. I love them.
If ever you're interested in knowing the rest, I strongly suggest you read the manga, because even if I still dream of an aniem continuation, I sadly have not much hope they'll actually do it.
With the fewest as possible, I'll go with this concerning the manga: We've got amazing new characters coming later, lots of camedy, but the story does take a serious path when yona gets to see al the problems in her country, and then, only then, does her character really glow up and become more epic (she's already on her way, but she's still in the cliché state in the anime). We've got politics coming up, other countries being more and more involved, loooots of flashbacks that gives soooo much information. It truly is a masterpiece. All characters (main and main secondary) gets a great character developement (Hak's a little late hahaha, but worth the wait). Zeno is my absolute favorite, it's a shame anime only covered his wierd ''growllll'' ''oh I'll eat with you'' ''oh yeah I'm the yellow dragon btw'' parts. Zeno is an amazing and complexe character, and the anime failed in giving it another episode to make people understand that was not all.
To anime readers: you should definitly try the manga, tho there's a lot of chapters, but it let's itself read super easily.
To Studiot Pierrot: MAN PLEASE AT LEAST bring it to the awa/nadai arc, it's such a cliffhanger, people will definitly want more if you bring it to there ;;
