The sub and dub are really different because the music is different. The original Japanese track has lots of music that is as loud as the voices, but the English dub is much quieter and sometimes has no music at all. It's different music too.

They create different atmospheres. I've only seen a few episodes, so far, but the dub seems more serious, almost documentary-like, while the original Japanese seems more... showy? I think I prefer the dub, because the original's music seems to be a bit too much and not particularly fitting to the scenes.
