Completed the series and has a lot of question

What thing they bring back if it wasn't their mother?
Why didn't there mother came back to life in exchange of al soul and body ( ed soul and body= mother body and soul)?.
How ed was able to exchange al soul to bind in armour ( arm shouldn't be equal to soul) ?
How ed defeated truth in end ( gate of truth should have more value than a body)
?
In end truth says "take everything"then why didn't he asked his mom too?
Why did ed draw circle at end if he had already seen truth?
Is there only one truth or every portal have different truth?

It was pretty easy to follow and 90% of your questions are answered, by simply watching the Show, is my Response.

i get you, it can get confusing at times so heres what i can tell u from what i’ve looked into

what they brought back was a very rough version of a “human”, really it was like an empty shell with some of al & eds blood

as for why there mom didn’t come back is because they screwed it up, imagine ur cooking and u mess up, the ingredients are gone but u get nothing in return

for the binding of als soul to the armor. the loss of Ed's leg is what allowed him to see Truth and once he regains consciousness, he uses his new knowledge to sacrifice his right arm to transmute Al's soul, binding it to a suit of armor.

ed defeats truth by acknowledging that alchemy isn’t the answer to everything and that you have to solve some things normally. ed offers him his alchemy in exchange after he declares that the power of alchemy was not what was important in his life and that’s what truth wants, for ed to realize that alchemy isn’t everything. thus, he was pleased that ed realized the truth so he beat him by realizing the truth.

he still draws one at the end because it symbolizes his commitment to the human world and his choice to live with the consequences of his actions; by drawing the circle, he is actively choosing to engage with the world and not simply passively accept the truth he has witnessed.

as for the other two i’m still unsure , i would try googling it some more

It has been stated multiple times, that transmutation of soul (resurrecting people) is total taboo, meaning mere attempt is completely illegal, because there is no such thing that equals to the price of human soul and attempting the ritual has dire consequences.
What Al and Ed managed to create with their botched ritual was just an empty, soulless doll, that has been created with ingredients they've provided. It became briefly animated and moved a bit at the cost of Ed's arm and leg and Al's whole body, but the doll quickly died away.

I'd like to answer most of them, but it would take too long to explain briefly, which is a bit bothersome (in Sloth's voice).

But well...

1) Just a living creature, that didn't live too much.
2) Bringing back the dead isn't possible which was told many times throughout the story.
3) That's up to the TRUTH. Ed said "Take whatever you want but give him back", although only the soul came back not the body, so the truth may have considered Alphonse to be Ed's right-hand man and gave the soul as equivalent change.
4) Because that's the only way to beat the Truth is to give up trying to use Alchemy to solve problems.
5) "Take everything" but can you take something that doesn't exist, anymore? If you had asked why he didn't get Alchemy back that would have been a more appropriate question.
6) Don't mix up day-to-day or normal alchemy with human transmutation. Even homunculus had prepared a circle during forced Mustang transmutation.
7) Truth is one but with different appearances and shapes. When the dwarf homunculus entered the Gate, he appeared in the Dwarf's original form when he lived in the flask, and it was different from Izumi's or Elric's brother's case.
