There are 9 volumes as far as i can see. Is it fully adapted? If not, up until what volume? And are there any cut content?

Gosick had a complete ending, so I guess they adapted everything

Yes, there is a novella "Gosick" with 9 volumes, and then there is "GosickS" which acts as an addendum telling about the events before and between the volumes of the main storyline, it in turn consists of 4 volumes.

The anime adapted the entire novel with the exception of a more complete ending in which Kazuki Sakuraba tells the fate of the characters in the future. In addition there are differences, for example Cecile is revealed quite well in the novella, unlike the anime adaptation, and also Victorica really smokes a pipe instead of just imitating Sherlock Holmes ;)
