That king/horse spirit was a threat. That hollow almost drove him into madness while trying to take over his body for real. I think people just like to remember the things the way that is convenient.

Hollows normally just straight up devour souls they don't usually have a reason for that but when white was fighting ichigo during his hollowfication training he kept trying to make ichigo accept his inner fighting spirit to embrace battle he had always wanted ichigo to be strong mentally so that he could act like the king he was supposed to be
Remember grimmjow felt irritated at ichigo cuz of the same reason he had this "king" mentality to tear apart his opponents and look down on em it was what made ichigo and grimmjow have their rivalry cuz they were alike in a way and one had to suppress the other
Looking back white had always taught ichigo stuff about Zangetsu even after he got beat by kenpachi he showed off the strength of zangetsu to make him acknowledge zangetsu
If he truly just wanted to consume ichigo soul I doubt he'd go that far tbh
P.s his quincy part had always said that white and himself are zangetsu
So it kinda adds up
I feel like he didn't want to straight up devour ichigo perhaps he wanted to corner him and force him to confront his killer instinct and embrace it
Remember white always referred to as ichigo as partner
There are different points in this story that hint that white is zangetsu but it all makes sense at the "Blade is me" episode
