Shirou/Rin/Saber/Sakura routes are completely done right? Basically there wont be anymore episodes/movies made with them?

The main stuff from the main timeline (Fate route, UBW, Heaven’s Feel, Fate/Zero) has fully been adapted in addition to some extra stuff from the same timeline (Grace Note). Don’t worry about having to wait for a release or anything, you can go ahead and binge the series.

However, we might MAYBE get a remake of the Fate route in the future after ufotable’s done with their current projects IF we’re lucky (since DEEN’s 2006 version of it is mid). Don’t bet on it though, we have no idea whatsoever on whether it will actually happen or no. you can therefore simply treat the series as if it were completed anyway

there is a chance for ufotable to remake sabers route and then we also have hollow ataraxia which is a sequel which might be impossible to animate

either way though the main stuff is already adapted anyway so i think it’s safe to say OP can just go ahead and watch the series

There are chances of a sequel to Stay Night series and a remake of original Fate route but ufotable is mainly focusing on Mahoutsukai no Yoru and Tsukihime (other works from type-moon), so I'd say maybe not right now.

there's a good chance for Tsukihime after the other side of the red garden as they already seem open enough to do Tsukihime (they did the intros for remake) and maybe a Grand Order as they have done CV's a couple of times
Strange Fake seems like they'll be animated by the guys who did the cv when it finishes in like 20 years
Type Redline has a darker artstyle that probably wouldn't work with Ufotable's current Artstyle but who knows

For the originals , we can says that it's done.
However , there is some side-stories/complementary materials not yet adapted :
Remake of the 2006 Anime more faithful to the Visual Novel.
Epilogue of the 2006 Anime : The Last Episode.
The Garden Of Avalon Light Novel , which show what was the King Arthur of Type-Moon.
The Visual Novel Fate/Hollow Ataraxia , which is a Sequel to the 3 Routes.

And there is , of course , the lots of Spin-Off/Parodies , like Emiya-san , Carnival Phantasm etc.

If you are referring to anime adaptions, yes they are all done. People keep saying they want the saber route to be remade, but chances are basically none because Ufotable is going towards other type-moon projects such as the recent movie announcement of Mahoutsukai no Yoro.

I just want a new Tsukihime adaption based on the remake VN.

Not currently, they're working on Mahoutsukai no Yoru right now but they're most likely going to pick up Tsukihime after it, they even helped out in the remake of Tsukihime visual novel.
