So the movie is coming to my town soon and I kinda want to see this movie, but I don't know really anything about Mazinger Z.

Do I need to know anything about the old show or could I go into this with no info?

The film is basically a fanservice experience, if you know nothing about mazinger overall you will miss a lot of things. Nevertheless I think it can be enjoyed even if you go "blank" into it.

Alright.

What if I try and watch the Mazinger Edition Z? It looks much shorter. Would that work?

Mazinger Edition Z is a new reboot and has plenty of new elements in it that you won't get in other Mazinger. I personally love it but it won't help you much there.

Infinity follows the Toei continuity and takes place 10 years after the original anime duology (Mazinger Z -> Great Mazinger) (I assume Grendizer takes place in another timeline instead as the third entry in the original trilogy)

What I suggest is to watch some of the crossover movies to familiarise yourself with the characters or alternatively read the Nagai Mazinger Z and Great Mazinger manga. But even then you won't get the full Toei experience given they're much shorter than the actual anime versions. That said, they're still worth it and should give you a basic overview of the series. I guess if you want more there's still Grendizer, and they might make its movie next but who knows.

I mean, apparently this movie features all 92 mechanical beasts of the original series, along with side characters like Misato and the trio of professors. (One died in the original series)

i haven't seen it for myself but i can tell you most Toei adaptations from the 70s era were watered down, family friendly, monster of the week trash that aged very poorly. Reading the manga is probably better if you want the ORIGINAL original experience

The old series are pretty much with kids as intended audience. You should try Mazinkaiser, Shin Mazinger Shougeki! Z-hen or the manga.

I see.

Well, I ended up just buying the DVD. I'll most likely give Shin Mazinger Shougeki! Z a try after this. Overall, I'm not having that hard of a time watching it.

I honestly love the original series, warts and all. It is definitely not up to "today's standards", considering it was made in 1972. If you try to look at the original as anything but a time capsule type of deal, you'll be disappoiinted. If you're into Super Robots and Shonen Machismo, you can't go wrong with the original series. The animation is clunky and pretty bad at times, but it has a lot of charm and personality to it. Don't write it off due to the age.
