alright peeps. being a vegan who eats little junk food, i have a moderately healthy diet. however i plan on making more of an effort in the near future to add more variety to my diet for the sake of nutrition. consequently i'll be making a shitload of different recipes, so i thought it'd be neat to have a thread for us veggie cunts to share our superior dishes.

i will update as soon as i move from school back home where i have a sufficient kitchen. till then, go crazy.

Serve it with rice or eat it by itself. Really easy to make.
For the seasonings just be really generous with all of them. Might take a few tries to figure out the exact proportions you prefer. I'd say I'm most generous with the italian and the roasted garlic pepper.
You can also add salt if you feel the need.
Enjoy! :3

I nominate @shotz_ for the next recipe

okay this one here is one of my faves, it's spicy potato curry.

just takes a long time to prep. it saves pretty well so i reccomend making it in bulk.

4 potatoes, peeled and cubed
2 tablespoons vegetable oil
1 yellow onion, diced
3 cloves garlic, minced
2 teaspoons ground cumin
1 1/2 teaspoons cayenne pepper
4 teaspoons curry powder
4 teaspoons garam masala (only ingredient that's kind of hard to find, you have to go to an asian market to find it)
1 (1 inch) piece fresh ginger root, peeled and minced
2 teaspoons salt
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can garbanzo beans (chickpeas), rinsed and drained
1 (15 ounce) can peas, drained
1 (14 ounce) can coconut milk

Place potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until just tender, about 15 minutes. Drain and allow to steam dry for a minute or two.

Meanwhile, heat the vegetable oil in a large skillet over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Season with cumin, cayenne pepper, curry powder, garam masala, ginger, and salt; cook for 2 minutes more. Add the tomatoes, garbanzo beans, peas, and potatoes. Pour in the coconut milk, and bring to a simmer. Simmer 5 to 10 minutes before serving.

i usually add in other shit too
diced bell peppers
a little curry paste
and some kind of nuts, usually peanuts, cashews, or walbuts. i throw them in with the potatoes for the last few minutes to boil them and get them a soft texture.

and ofc best to eat with rice.

you can virtually add any vegetables you want or even tofu.

i also reccomend using a big wok for the curry mix, a skillet will barely be enough just for the amount ingredients that recipe calls for.

Sounds sweet @shotz.. the spicy potato curry, not the jizz...but I have heard you can actually sweeten your jizz by eating a lot of cinnamon and fruit #vegan perks

Btw, nominate some other people for recipes

oh shit
i actually remembered this thread the next day but i thought it was just from another hyper-realistic dream oops

main issue is that i never use/save actual recipes, i just kinda get an idea of what i wanna go for, eyeball all the ingredients, and mix stuff up. so i don't really know how helpful i can be with this but here's my stuffed peppers recipe:

- 6 large peppers (or less.. or more if you have a trillion people coming over)
- brown rice (quantity depends on the number of peppers. let's say 1 - 2 cups)
- red lentils (ehhh 0.3 cup)
- champignons
- green beans
- tomato sauce (actually i use those that are called 'traditional italian' that also have carrots, onions, and peppers in them. they have more flavour imo but i have no clue what that sauce is actually called so i just said tomato sauce for the sake of not complicating things b/c i'm sure that would work well too)
- turmeric
- thyme
- garlic or garlic powder
- literally any other spice you like
- 2 tbsp vegetable oil
- nutritional yeast (optional. tho lbr half of this shit is optional)

1) carve + empty out the peppers (i usually keep the bits with the stems as like little hats for when they're in the oven), leave them aside.
2) cook the rice and lentils. cut the mushrooms and green beans into teeny tiny pieces and cook that for a bit too.
3) once everything's cooked mix all the ingredients (rice, lentils, vegetables, spices, the sauce) into one big mush
4) preheat oven to 200 degrees (celsius)
5) put mush into peppers (you can cover the hole with either the piece w/ the stem if you kept it from earlier, or cut up a tomato into round slices and use those as covers... or maybe do that with a courgette, that would be nice too)
6) put peppers into a baking tray
7) put oil over the peppers
8) stuff em in the oven for about 45 minutes
*(9) optional step - sprinkle some nutritional yeast over them once they're done and you cut them up

tadahhhh

sorry for the terrible recipe writing skills, i promise this tastes good.
