Talk about worldbuilding you could build a house on! Both series are wonderfully complex with distinct art styles and character designs. Dungeon Meshi more appeals to biology buffs, describing the anatomy and physiology of its monsters in surprising detail, while Witch Hat Atelier draws on an arts-derived system of complex magical circles. I like thinking and I like looking while I have to read, so both of these series are a treat!

Both feature:
-Very beautiful and comfortable art
-Overarching sad and seemingly impossible quests to save a family member but average panels are often silly and feature endearing growing relationships between characters.
-Exploration of ethical issues such as forbidden magic and limiting limitless power
-Strong teams making up for individual weaknesses, inspiring individual growth and stronger belief in oneself
-Strong and diverse female characters with no fanservice or relationships with questionable age gaps
-Female mangakas
-Very detailed science within worlds (DM with biology/cooking and TBA with its magic system and environmental details)
-Unique character and costume designs

Both have:
-very good art
-good world bulding
-exploration of ethical and societal issues
-similar tone
Both have beautiful, detailed art, and examine the inner workings of a cute / charming RPG-fantasy world with dark secrets. Characters in both have unique / diverse motivations and aren't all traditionally heroic, mostly banding together out of circumstance. Very similar in tone!
