I'm a big fan of just about everything man. Don't particularly have a preference between Shounen or Seinen, because the any demographic/genre of show has the potential to be fantastic. Much of my favourites are coincidentally a good mix of both, and SAC that I'm watching right now hardly resembles another favourite like Hajime No Ippo, but I would seriously consider it up there amongst the rankings because its simply too good. As a new watcher man, my best advice is to simply watch whatever you want. Expand your tastes. Experiment with challenging shows or genres your not familiar with. The world is in your hands man.

Ahh that's a nice choice, but yes Saraiya Goyou is slow-paced and leans more onto niche territory. While it's heavy on character drama, there is still enough stealthy samurai action to expect in the second half. Also if I remember it correctly, the tone should turn a bit darker by the time a certain character's backstory gets introduced. But anyway, I'll leave it to your expectations. Just glad that you seem to appreciate it, since it's often overlooked and unfairly judged for the unusual art designs, believe it or not.

And for the record your page left me with way too many mangas and animes in my want read and watch list.
