Well, I certainly agree that knowing that a series is going to have a good end takes most the tension out of the fights, for example in any shounen show like Bleach or One Piece, you know they are going to win, so it takes the tension away from the battles somewhat. However I don't think that a happy ending necessarily makes the plot predictable, so long as the writer is competent.
In fact sad endings can be incredibly gratuitous and "easy" themselves. Shows with no tact (or writing ability) use a sad event to try and gain easy points. They shove the sad events down your throat in the hope that you'll be taken in by it, and people usually think highly of shows that moved them emotionally.
Then again I guess you were just talking about sad endings, not sad scenes... Well, I think that so long as the series can make it unclear as to which ending it will be then it won't be too predictable. I like happy endings because if I am watching a show I love, and I have all these characters I love, then I do want the best for them. I would want to know that they had some hope at the end, at the very least.
As for true gems, Samurai Champloo was amazing, something I finished a day earlier than SW. I didn't think I'd like it so much because I'm usually not such a big fan on shows that try simply to be stylish, and are also episodic.... basically I didn't like Cowboy Bebop, and Samurai Champloo was very similar in many ways. The difference is though that I loved SC, giving it a 9 because it was a very good show.
As someone put it "Samurai Champloo tries to be the coolest thing ever, and it succeeds spectacularly."
