The last two relevant arcs were the Zanpakuto Rebellion and some silly thing about clones of the Captains showing up. Both of them had ridiculous animation quality and contain the best fights in the series, along with putting the spotlight on the good characters.
The main story being interrupted is more of a fault with the mains tory and less with the fillers imo. Bleach's story, mainly the Arrancar Arc, was so unproductive and borderline irrelevant that it felt refreshing for it to go away and be replaced with something interesting. The fillers tend to be halfway decent because of the exactly what you just said: 12-26 episode series are good. So taking Bleach's cast and stuff and making a short, high-quality arc out of it is a good thing.
tbh I enjoyed some of the 1-shot Bleach fillers, but a lot of them are garbage, yeah. I personally liked the Soccer one just because it felt like the very first arc, which was the highlight of the show. It had a good "slice of life ghostbusters" quality to it
Now how exactly is Bleach filler "unwatchable"? The last two filler arcs have had movie-quality animation, fantastic fights, and have featured the good characters that the manga never focuses on. I don't see how that's unwatchable.
Ahh! I have heard of Outlaw Star, but I think I just never wanted to give it a shot 'cuz it's an older kinda anime... I'm so all about the new school style these days that giving anything made before the year 2000 a shot is so hard for me to do! >_O
B-b-but maybe! Just maybe!!! If it's comparable to Cowboy Bebop, then it MUST be good!
