I just read a small part of your review of Shokugeki no Altair and man... Do you seriously expect a shonen manga to be realistic ? what is next, are you going to question, how realistic Naruto manga is ??? Naruto is not a realistic take on Japan's history... Right... That is why you don't like it... lol
Regarding your review of Altair, I think you're mistaking good vs bad with conflicts between different interest. Altair is clearly the latter, the empire fight for their own interest which is expanding its territory because of its militaristic approach while Turkiye is trying to maintain status quo and stability because of their dependency on trade. Yes, the empire's methods are often cruel but Turqiye also sometimes selfish.
"By contrast, the series always glosses over any point where the Turks could be seen as doing some morally questionable, either playing it down, or saying its alright because the Imperials are all evil". Imo, you're just nitpicking. There are definitely some aspects in the story where Turqiye is punished directly or indirectly by their "bad deeds" done in the past and the future. Though I can't say that the author treat both the Imperial and Turqiye fairly in terms of consequences of their deeds.
Just want to say that, because your reasoning bothers me. Thanks
