I enjoy violence/gore/slasher, horror, yaoi/shounen-ai, and psychological genres. I don't care for most "mainstream"/popular anime (I find that most series are over-hyped), but have found some to be quite enjoyable. Some anime that's bashed for being awful can be downright enjoyable and not always in a "guilty pleasure" way. (The Devilman series from the '70s was a guilty pleasure. Legend of DUO was fantastic and I think it should be expanded into a series with "proper"/non-Flash animation.)
Dubs vs. Subs: I think it really depends on the individual series. I try to watch a series all the way through both ways unless the voice acting in either language bothers me. I found Code Geass and Gravitation to be unwatchable in English, whereas I love the Darker Than Black, Fruits Basket, and Soul Eater dubs. Funimation's comedy dubs of Shinchan and Hetalia are both, in my opinion, funnier than the originals.
When available, I generally prefer Cantonese dubs because they're so melodic. (So far I've only seen Cooking Master Boy and Xiao Qian (A Chinese Ghost Story) in Cantonese.)
