I'm loving how the manga finally got to the good stuff in the latest chapter. I gotta say though, it still looks a long way from being finished haha.
I'll explain sure.
Okay, quickest explanation would be that they are a mix of an anime, a book, and a choice based game.
What you get is that a Visual Novel is a game where all you do is read text. In addition to text, there are also character sprites that often make different facial expressions that go along with the conversation. There is also an OST, and most characters have seiyuu as well.
Visual Novels could also be called dating sims I suppose, but I dislike calling them the same thing because the stories in Visual Novels are often quite complex and deep, unless it is a game aimed at being nothing but being a dating sim.
It could be called one because VN's aren't linear. They are split up into a "common route" and "regular routes."
The common route is the period when you first start playing. You will get choices at important parts (and many unimportant parts as well), where your aim is to get a "flag" for your chosen heroine. Eventually when the common route ends, the girl with the most "flags" is the girl who's route you enter.
Usually there would be 3 or 5 heroines in a game, and each would have their own unique route. There may also be what is called a "true route," which is the games canon route.

The manga isn't bad, but I much prefer the LN's. It's my favorite LN series.
Fate/stay night is a Visual Novel. (If you don't know what that is, I can explain it to you)
It's my second favorite Visual Novel, though it was my favorite for a really long time. (Long time being relative, since it hasn't even been a full two years since I became an otaku, let alone subtracting the time before I fount it)
It has a manga, but it's not very good, and I do not recommend it.
Grisaia no Kajitsu I believe has a manga, but it is also a originally a very good Visual Novel, my third favorite in fact. I do not recommend the manga for this one either.
Hayate is a pretty good comedy manga, though I'm not very in love with the latest arc. (I'm really glad it's over)
I'm completely caught up with it, so no worries. (I don't update my manga list too often tbh)
There's a lot of anime I'm looking forward to next year. The adaptation of Mahouka Koukou no Rettousei, the new Fate/stay night remake from Ufotable, the Grisaia no Kajitsu adaptation, etc etc.
Good choice btw, an anime adaptation for Brynhildr has been announced, probably come out next year.

Kiwaguro no Brynhildr is pretty good, same mangaka as Elfen Lied (Of which the manga is better than the anime, so check that out too)
Eden no Ori is also a pretty good one, though most people tend to dislike the ending. (I didn't particularly)
Although you've probably heard horror stories about how fanservice filled the anime is, Freezing is actually a really decent manga which was just adapted pretty badly. Definitely check it out.
Mahouka Koukou no Rettousei, the manga is really good but it is originally a light novel series, the light novels are much better. The manga has adapted 2 of the 12 LN's so far. I would suggest you read the novels on Baka Tsuki if you like the manga, but I can understand why you wouldn't.
Btooom! isn't a bad manga either. Another decent one is Deadman Wonderland.
If none of those work out I'll probably need a specific genre that you like. I know plenty of manga even if I don't have that many listed on my manga list.
