Fate/Stay Night is similar to the Muv-Luv series in a way. The first part/route is is mainly SoL romance. The second part/route is more action oriented but still relatively lighthearted. The last part/route is much darker compared to the previous two and also has the best moments in the series.
The UBW anime cut out most of Shirou's monologues so he feels pretty empty in the anime. It may not sound like the VN is much better, but Shirou's monologues are the reason why UBW is my favorite route. Also, the Shirou vs Archer fight in the anime was poorly done compared to the VN.

Yeah, I hope that Mahoyo gets a full translation soon. Either that, or I go read it in French (though my French is pretty terrible so I probably won't get far into the VN)
The Fate route is my least favorite route since it has a ton of infodumps and a lot of deus ex machinas. That being said, I still enjoyed the romance and the ending. UBW is my personal favorite, so hope you like it!
