How it started: I used to watch tons of anime when I was younger. I wasn't even aware it was called anime at that time and I eventually grew out of series aimed at children, of course. Fast forward to February, 2017. A friend of mine recommended Neon Genesis: Evangelion and me being interested in anime already, I decided to give it a shot. And I liked it. Afterwards, another friend recommended Parasyte and I knew then that it is my kind of thing. In a span of four months, I watched over 50 different series.
Why I like anime: I want to note that I'm not the tiniest bit a fan of any kind of Fantasy. I wouldn't watch movies/series revolving around monsters, beasts, demons or vampires. robots and mecha weren't put in consideration as well. Anime showed me a side of beauty I was missing out and probably will miss out in non-animated series/movies. What non-animated movies/series lack, as well, is the beauty of anime art. I cannot possibly express how eye pleasing it is to watch a series if it has a decent anime art. The joy it brings me is a joy no other cartoons or non-animated shows could ever give me. Another thing is how admirable it is how the makers pay a great deal of attention to details. Of course not all of them, but I, more often than not, found myself surprised by the amount of care given to different kind of series/movies.

The first Episodes and the following first Episodes can be quite average.
I know that it can be for many people. So maybe for you as well.
But it will improve a lot afterwards.
