And I forgot to mention that the art in 2006 version would be more inferior than in the new UBW anime. But it's still watchable.
The thing about Fate series is that, it can be viewed in many orders. Either watch the best ones only, or watch in chronological order, or watch in releasing order, or watch all Fate/stay night versions before watching the prequel called Fate/Zero. So whichever order you prefer would be up to you. But since I haven't read much of the visual novel of F/SN other than the prologue, I only would mention this due to many visual novel fans recommended it, that is, watch Fate/stay night versions before watch Fate/Zero, as the prequel spoils all the mysteries and revelations that F/SN tried to hide before being revealed late on. But I'll just put this in chronological order in case you wanna watch it this way. The release order of course, you can just search for it on MAL. But I'll put the year anyway to make things easier. And then I'll mention some optional stuff that you can watch. Hopefully you are aware that F/SN has 3 routes in the visual novel, and all three of them happen simultaneously in their own universe - 1st route is Fate route, 2nd is Unlimited Blade Works (UBW), and 3rd is Heaven's Feel (HF). And another advice, do not expect F/SN to be an ensemble cast like in F/Z, as each route of F/SN covers different characters. And also which character dies would be different in each route.
1. Fate/Zero (2011/2012 - two cours). This is the prequel to all three routes of F/SN, it deals with the 4th Holy Grail War (HGW). The studio was ufotable.
2. Fate/stay night: Unlimited Blade Works - Prologue (2014). You've seen this already as far as I see in the shared anime section, so you are good to go, as this was the adaptation of the prologue from the visual novel, which was the prologue for all 3 routes of F/SN despite it was shown in UBW anime instead.
3. Fate/stay night (2006) - This was the very first F/SN released in the anime medium, it got a lot of hate from visual novel fans, due to the fact that Studio Deen took elements from other two routes (UBW and HF) and mixed within this anime which focuses on Fate route (aka Saber's route). But you do need to watch this to understand UBW and HF route. And it will clear your head from asking "Why is Saber never been fleshed out or developed or focused much in UBW route???" (as in UBW route and possibly HF route, Saber takes the backseat, as other Servants and Masters took the major focus). And also, prepare for OST style changes as you came from UBW prologue, since the composer was different. And expect the style to change more if you decide to go for F/Z first.
4. Fate/stay night [Unlimited Blade Works] (2014/2015 - 2 cours). This was done by ufotable just like F/Z. This was the adaptation of 2nd route of F/SN visual novel. Some pure visual novel fans out there were salty about this adaptation as well, as the director wasn't much experienced enough to direct such a high regarded franchise. So something weren't fleshed out too well compare to how Fate/Zero went, which the fans called the perfect adaptation. Anyway, UBW route focuses on Archer and Rin more, as well as the clash of ideals that Archer and Shirou had.
5. Fate/stay night: Heaven's Feel (2017-20?? - movie trilogy). This upcoming movie trilogy adapts the 3rd route of F/SN. It focuses more on Sakura and Rider, as well as the story more than the characters. And two additional characters (one new, one alt version of an existing Servant) would only be seen over here in HF route. People say this route is the darkest route compare to Fate and UBW.
So that's pretty much what you need to watch. There are other Fate related stuff too, some are old, some are new. But only watch them if you like this entire franchise a lot. I'll list them without the year of release this time unless for distinction purposes.
- F/SN UBW (2010). This was an earlier attempt to adapt the 2nd route of F/SN, but from Studio Deen, the crew behind 2006 F/SN. But failed miserably due to limited budget and rushed development (there's no way to cover a long route in a 90-ish-min film, lol). So only watch this if you want to have a comparison to ufotable's UBW adaptation.
- Fate/prototype. A short 12-15 min clip showing Kinono Nasu's (author of F/SN visual novel) first idea of F/SN before it was scraped and started on a blank page.
- Fate/Kaleid Liner Prisma Illya (4 seasons and some OVAs/specials). An alt version of Fate series, focusing on Illya but with the theme of a dark atmosphere magical girl. But since this was done by another studio, the art style was far uglier than Deen or ufotable. But the fight choreography was pretty good. Only watch this if you have some knowledge of F/SN routes. And....expect a lot of borderline fanservice (season 2 especially). Order to watch this would be on MAL anyways, as there are too much to list here, lol :P
- Carnival Phantasm. This is a hilarious parody of F/SN and another of Nasu's work called "Tsukihime", which got a short anime adaptation many years ago but was hated as much as 2006 F/SN. So if you love for some laughs, then watch this :D
