Your post has inspired me a lot.
I've definitely forgotten a lot of core6k words, and I find it difficult to recognize the complicated Kanjis, but I believe I'll reach a much better proficiency if I keep on revising like I'm doing now. Honestly, I feel that even though I've forgotten a lot of Japanese vocab, I can understand Japanese much better than before because of my translation hobby. I think I'll be aiming for the N2 exam next year. I know I still got a long way to go, and N2 is helluva difficult. But if I put in the sheer effort like you did, I might be able to pull that off.
PS: You may also try Natsume Soseki's works for some more outdated words. ;)

Can you tell me the job scenario for an Engineer in Japan? I've seen that most gaijins usually work as JET teachers in Japan. Since you are also an Engineer, how was your experience?

Yup, I've started doing that. I've set aside two hours in the morning for revising KanjiDamange and watching a raw anime episode. Till now everything is going smoothly. I've found this amazing website called animelon that has raws with soft subs in both Japanese and English.
Now since you are approximately N1 level, how do you find the anime like monster and steins; gate in terms of difficulty?

Personally, I lost momentum in the middle of my Japanese studies last year, so no staggering progress has been made. I still find it difficult to manage Japanese studies with my Engineering studies.
Recently, I've been watching Monster and have wondered how much time would it take to understand it without subs. I mean they use pretty complicated medical and political terms.
MATLAB is on my To learn list, I'm thinking of using it to implement and learn LSB Steganography. I've worked only on software side for majority of my time like Algorithms designing, game development ,various languages, web development, Linux; but yeah I did study about Architectures, processors, Assembly, Addressing, Mux-Demux, Latchers. I can say, the hardware side is something which I found a lot harder than the software side.
Well, I've still got one more year to study and I hope I'll be able to broaden my skills and also clear N2 Japanese , and then move on to pursue masters.

I've been following your advice and have watched ao haru ride and gekkan shoujo nozaki kun. I needed to look only 2-3 words per episode. So, it was a good experience altogether. Currently, I'm watching noragami and have completed 3 episodes so far.
By Digital/Computer Engineering, do you mean digital logic design and computer system organization? Like multiplexers, flip-flops, decoders, mapping of cache etc.

Your suggestions have certainly exposed me to the resources that would help me mend my skills in a better way. I should mention that a few more questions pooped in my mind while I was reading your reply. Would you mind answering them?
1) For how long have you been studying Japanese?
2)How did you increase your level upto the point where you don't need subtitles anymore? Honestly, I tried watching Sakamoto raw as per your suggestion, but I could barely understand most of the dialogue. I somehow managed to finish the episode but that took about 1 hour. I've already finished 2000 Jouyou Kanji and Core6k deck. On the top of that, I've played some VNs in Japanese too.
3) How do you find the time to study Japanese?
4) You said that you are already at JLPTN1 level. Does that mean you've already completed Kanzen master series? Or did you use some other resources?
5)How do you memorize difficult words like たんぱく質, 物質代謝 etc. ? The more I find these difficult words, the more I feel looking at a never-ending ocean of vocabulary.
6) Sometimes I feel that all these Japanese studying will go to waste once I set foot in working world, as being a computer science engineering student I don't know whether the skill will be useful or not. Did you ever feel this while studying? If so, how did you regain your motivation?

So, I was searching for easy raw anime to watch on google and I stumbled upon your thread わかりやすいアニメ, and then ultimately ended up on your profile page. If you don't mind, I've got a few questions for you.

2) If yes, how much proficiency have you reached as of now?
3) What resources did you use to study aside from memrise?
4) How did you become able to watch anime in Japanese? I've been studying for quite a good time but even then my listening skills are next to nil.

Indeed, 新幹線 doesn't seem that logical/obvious and your "justice + justice" example seems pretty weird/funny for a foreigner. So the second kanji in that case kind of expands on the meaning despite seeming almost the same thing at first sight?
I wonder, how often people there create new words by putting together kanjis in new ways? Like, if I were a fantasy novel writer and I came up with 内竜 (inside + dragon) to describe the hidden spiritual force within people or something like that, would that look pretty normal or strange? Maybe even regular people on message boards come up with new compound words for comedy purposes, etc? Is that a thing?
By the way, what do you do if you encounter a new word? Do you write it down somewhere to revise later or do you learn more "naturally" and just get accustomed to words after you encounter them several times?
By the way, don't you find it tricky to read some complicated kanjis on computer screen? They can be so small even if you zoom in a lot. In the left half of 配 some strokes even merge into one for me. I guess it's a matter of getting used to them though...
I saw your thread about 分かりやすいアニメ where you talk about how you're learning Japanese and... Can you be my senpai please? :) I recently started learning the language too but I don't have any friends to discuss it with. Would you be okay with me asking various questions from time to time? No pressure, if you're busy or just uninterested, I'll totally understand.
This one has a large setting but isn't nearly as far as Kubera or ToG, even so I really like it so far and seems like it is going to get better in the future.
Have you tried UQ Holder yet? It's only just started but has promise for the future.
Omoide Emanon and it's sequals. Takes place in our world, but is really good. Read all 3 of them. They are short, but really good (1 of them isn't fully scanulated yet but still coming out). I plan to read the novels eventually.

Has promise to be a great fantasy/game-like world similar to SOA, only 10 chapters out right now so will take some time for it to get really good.
Just looked at your list, how have yo not read the number 1 manga on MAL? Berserk is worth a shot man.
Hard to come up with something on Kubera level that you haven't read.
You still haven't tried The Voynich Hotel which isn't what you are looking for but is really funny and good in a lot of other ways.
Tokyo ESP starts out a bit weak but gets really good, although they just finished the first arc and the second arc seems horrible compared to the first so far, but we'll see. It is a bit shouneny at times, but still a good read.

The genres MAL give it are wrong, although it starts off as a fantasy rom-com, it later becomes quite a larger world that is pretty interesting. Also has a short and sweet prequel that is optional.
