Yeah, everyone has their own taste, but great that you want to expand your horizons. I think a good transitional anime would be Gintama. It's a very popular comedy anime, you've probably seen it on the top ranking before. It has a SoL-like structure, but there is a lot of random stuff happening and also action every once in a while. Skip the first two episodes though, they are filler made for manga readers. The real first episode is episode 3.
If you want to watch a "true" slice of life (though it doesn't have the tag anymore since MAL changed some definitions recently), I recommend K-On. It's by the same animation studio and director as Silent Voice, although the story is very different. Many regard it as the best of the CGDCT ("Cute Girls Doing Cute Things") subgenre.
For something more dramatic, I recommend Sangatsu no Lion, which focuses on the main character recovering from depression, as well as problems of many other characters, including a very well done portrayal of bullying in the second season.

I'm not really a fan of action shounen like Demon Slayer, I just enjoy genres like drama and slice of life a lot more. Of course there are always exceptions, I like Hunter x Hunter and Jojo, but that's about it. I only watched Demon Slayer in the first place because people on the forums talk a lot about and I wanted to have an opinion on it.
As for Konosuba, I thought that the jokes in the second season where kind of repetitive, especially when they went to that town in the end. Other that it was very similar to the first season. I really liked the movie though (8/10) because Megumin and her people are very entertaining.
I didn't rate them below average I gave them 5 and 6 out of 10 which is average and decent on my criteria. Nothing is objectively good so no it is not a no-brainer and no one should be expected to adhere to the popular opinion.

If you don't want to watch a whole series, you can try the Ghibli romance SoL movies Whisper of the Heart and Only Yesterday.
