Well that certainly is commonplace in many otherwise great stories, many sports series in particular actually try evading going the whole, "sports, sports, sports" route (eg; ping pong, rookies, prince of tennis, haikyuu) to have a narrative that can reach the audience outside of the intended niche. So maybe I like Embers because it's a breath of fresh air to have a series focused on the sport itself with a nice drizzle of character drama with the MC's yankee attitude, and his rival having to learn how to suck up his pride.

Honestly, I think them doing HXH all over again wouldn't be worth their effort. Anyways, I find you profile fascinating, so much to unravel! Is Rakudai Majo something you'd recc?

I see. I think following the manga is good, but if it's done panel-by-panel and it's adapting literally everything in it, including things that only make sense in a manga format, it's a bad choice. Compare David Production's JoJo anime, especially parts 1-3, they're really bad precisely, because they follow the manga so closely.
