I started to watch animation series quite a while back. The classics like Naruto or One Piece were the first ones I got to know.
But just a few years ago, I started for good to watch real anime, in the sense that I tryed out nearly every genre of anime.

I got to experience Cowboy Bebop and other brilliant animation series, as well as pretty bad garbage.

Since I think an anime has to have a good production quality at least, most of my average anime have a rate of 7/10. That only means that the series didn't had groundbreaking flaws like a terrible animation or plotholes so big you have to stop the anime.

7/10 is for OK anime, or an anime that isn't extremely flawed.
1-6/10 are just anime to skip. The lower the grade, the worse the anime gets.
8/10 are animation series that are really enjoyable or have really something that comes out of them, like brilliant characters or an amazing plot.
9/10 are animation series that you should watch, since they pretty much define how animation series should be to give you a marvelous experience that you will never forget.
10/10 are masterpieces, I don't rate often 10/10, since it is probably the most biased ratings I've made. So you should better consider them like 9/10 anime, since my personal opinion is much more present for the masterpieces than for the other ones.
