By chance, are you a 'military brat'? Asking b/c of the locations you have lived and you live in GA which is the home to four major bases.

These are a few of my favorites. Like not like, watch not watch it is up to you to decide. I see other members have given you many great titles that they have enjoyed. That's what I like about anime and mal, people want to share what they like with others. I have tons more if you want. I am a sucker for a good romance. Enjoy!
Hanasaku Iroha is a good choice - it's probably *the* most similar show to Shirobako out that exists. P.A. Works used it and Shirobako together to help advertise later series they did - they do have several more in this vein, but Shirobako and Hanasaku Iroha are by far the best they've done. Hmm... it's been a while since I've rewatched either of them. I should change that. Well, regardless, have fun with it!
And yeah, I love nothing more than blathering on about anime I really like, so you won't get concise recommendations from me and I'm always happy to do so.
Snow White with the Red Hair - Has more of a fairy tale motif as the title suggests. There's less focus on her work experiences and moves more towards a romance story as it progresses. Hanasaku Iroha - Same studio as Shirobako. Ohana is possibly my favorite character of all time - she's something like a more aggressive Aoi. It's a little more high school, there are more random hot springs scenes, and it skews a little further to the drama end of the scale than Shirobako. It does also get a bit into that same sort of behind-the-scenes stuff, this one about hot spring inn/family-owned business management. https://myanimelist.net/anime/9289/Hanasaku_Iroha
Aria - This is a decent bridge between shows like Shirobako and the "iyashikei" genre, though it doesn't really get very Shirobako-like until pretty near the end. "Iyashikei" I believe means "healing", and shows in the genre are largely about calm, relaxation, and just general positive vibes. It's not for everyone, but if you like it, there's more in *that* genre I can throw out later. It is a 52 episode series between its three seasons, and it gets stronger as it goes on, but if you don't like it at episode 2, you can drop it there. https://myanimelist.net/anime/477/Aria_The_Animation
New Game - This is a tough recommendation. On the one hand, it is basically Shirobako but for game development, with most of the good things that go with that association - work environment, strong main characters, behind-the-scenes coolness, running story. On the other hand, there is an unfortunate amount of focus on fanservice and cutesy background girls. It's not a *large* part of the show, but it is still significant presence. If you're up for gambling on whether this crosses your threshold for fanservice tolerance, there's a lot of good substance here, but I totally understand if you'd take a pass on it. https://myanimelist.net/anime/31953/New_Game

If you like Shirobako and want more, hit me up. There's a lot of good stuff kinda in that vein that all have their own unique charms.
Anyway, it seems like we have pretty different tastes in anime (at least based on what you've seen so far) so making recommendations is tough.
My blanket recommendation that I would make to literally anyone is Shirobako. It passes your three criteria of what you don't want to watch: 24 episodes, the main characters are primarily "cute girls" but it's definitely not just about them being cute, no fanservice that I can remember. It's basically a workplace comedy/drama about people who work in the anime industry - hilarious, fantastic characters, pretty cool behind-the-scenes sort of deal.

Also if you like Elias' character a ton what you said below might actually break his character writing-wise. Sorry about not saying much in this response.
See for me then it would have been pretty much any other fantasy princess romance type thing. Which I think has been done so many times and probably better than this writer could have done. To me watching an adult creature who is super selfish and clearly has the mind of a child buy a slave girl and ask her to marry him without understanding anything emotion wise is pretty interesting in my eyes.
Also for the not realizing the feelings were romantic. I mean the source material is going to keep going and you can see him slowly growing more and more attached to her in other ways. He gets jealous when he sees Chise from a friendship with someone else. When he sees her "die" he gets enraged and all his emotions are let loose. The thing is he feels emotions but doesn't understand them. Such as feeling lonely when she is gone.
I would also like to point out in the first episode he calls her a puppy undresses her and puts her in the bath not even realizing how much he was in her personal space and really getting to close. At this point in the show, we can summarize he is aloof of how humans actually feel as he is treating her like a dog rather than a human. It poses an interesting element of how we treat our pets as well. Some people treat them like toys rather than real living creatures.
Okay sorry for my tangent. My word I kind of just rambled. I hope you might have at least got something out of it though XD
Also just wanted to point out that I think Elias didn't/doesn't understand the word bride. And even by the end, I don't think he really understands what it means. Imo the way he views bride is being close to someone and not in a romantical way. Anyway I know I am a crazed fanboy so I hope I didn't sound rude.
