That sounds like a good choice. My favorite Ghibli film is Grave of the Fireflies (I know, it is probably the most depressing film they have made). You know, I have the urge to rewatch Carnival Phantasm, I had no knowledge of the Fate series at the time, so it just seemed kind of weird to me. Should I? I did like the original Fate/Stay Night which I saw after Carnival Phantasm, maybe I will understand it then.

True- The remake of the original gave it a better ending with no cliffhanger and change in style. Although I prefer the original style. It had its peak so that'll all neccesarily. Thats why most people recommend brotherhood to people instead of the original. Its like a balanced anime, better plot, better characters. Especially the focus on the development of the characters

I can agree in a way that the ending isn't as good. Possibly a season 2 could of been better linked to brotherhood. I would say brotherhood is a lot more simple to understand as a whole so thats why I like brotherhood a lot more better
