So I'll start by assuming you've the popular ones like Steins'Gate, Madoka and Re:Zero
The first one I recommend is Kara no Kyoukai (Garden of Sinners) It's a dynamic between a pacifist guys and a woman which is a natural-born killer. Lots of philosophical theme, the pace is slow but it also has some nice combat scene. The music is great and create a unique atmosphere.
If you don't mind sports anime, One Out is also a good one. The MC is more the gambler type and will use bluff and his observation skill to trick his opponents. It's more about a greedy team owner that wants to screw up his ace pitcher and the mind game that both are playing to gain an advantange over the other than baseball itself.
If you are not rebuke by unconventional and unique art style, Gyakkyou Burai Kaiji: Ultimate Survivor is very interresting. It's about a guy that has a huge debt and fall into underground gambling where losing can mean slavery or death. There is aslo Akagi from the same creator but that one is about mah-jong.
Haibane Renmei is a slowburner and feel more like an easy going slice of life for the most part until the end where it become very intense emotionally.
Kuuchuu Buranko is about a psychatrist dealing with patient with various weird mental issues. The visuals are very artistic with the choice of color and the use of real footage mixed with drawing. It's a bit weird but very unique.
If you want some psychological horror, you could try Umineko no Naku Koro ni. Maybe not as good as Another or Higurashi, I think it was alright
If you like Cyberpunk and mystery you should try Psycho-Pass. It is written by Gen Urobuchi (Madoka and fate/Zero) I really enjoyed the 1st season but the 2nd season is not as good and haven't watch the 3rd one. So I would still recommend it just for the 1st season.
NHK ni Youkoso is also interresting but a bit depressing as it is about a neet trying to get back into society with all it his mental issues.
Boku dake ga Inai Machi, the first 8 episodes are really good but I thought the end was a bit disapointing.
Serial Experiments Lain, I've seen it a while ago and don't remember much but it was pretty weird.
There are also a couple of good one that I haven't seen or finished but have received a lot of praise like Monster, Paprika, Yakusoku no Neverland, Shinsekai yori or Zankyou no Terror

Do you like slowburner and more philosophical stuff? Since I don't know what you have seen I might recommend anime you already seen but I'll talk more about it when I come back
