You’ll notice that I only score a number of anime in my list. There’s a reason for that. These are, in my opinion, the very good ones, which gave me so much more than just a thrill ride. I rate them from 8-10. If an anime doesn’t merit this range, I normally don’t bother to rate.
But of course, quite a few anime series would be rated 7. These would be the highly entertaining ones - such as Utawarerumono or Full Metal Panic! - which though kept me glued to the series throughout, cannot really compare with the sheer majestic force of say Spirited Away or Evangelion: 2.0.
And yes, my rankings are but subjective. But if you happen to browse through my anime list, give those that I've ranked 8-10 a try. Chances are, you'll be glad you did.

You seem to be quite a good writer, I like that.
I agree with your sentiment of looking only for anime "that are remotely unique." I place a big emphasis on tepid/bland anime annoying me. Obviously sometimes it is hard to separate my biases from this (like being incredibly anti-slice of life), but something like Kyou Kara Maou is just literally the blandest series you can have. (for a slightly less compelling example of something you watched, Gundam Wing, which even had pretty bland giant robot fights, let alone characters and conversations.)
Angel Sanctuary is a pretty good example of a series (manga, did not bother with the anime probable butchery) that, no matter how kind of terrible the quality is in a lot of ways, the end product is still something unique and with such a different charisma that I am going to like it.
