083 Stardust Memory; OPTIONAL but I liked it, and it covers events leading up to Zeta. Also compilation is available if you're init for the world building and don't care for much else (called Afterglow/Last Blitz of Zeon)
Zeta; Which is the sequel to 0079. Muscle through the 50 eps if possible. (ZZ is more lighthearted and considered to be inferior. Give it a shot if you can.)
Char's Counterattack; Essential to the Char-Amuro rivalry

F91 which is a hard one to judge given it's circumstances (it became a movie even though it was slated to be a full series; you can imagine why it's a polarizing one)

If you really wanna get to heart of Gundam, watch 0079. It's dated, but oh so marvelous. Gundam Zeta, the sequel, I'm watching now is pretty cool since you get to see Gundam's progression of having harder science, better animation, and more intricate storytelling. There's compilation movies for both of these series that can really help keep the pace brisk if you just wanna get a taste of what Gundam can offer. Plenty of politics, big schemes, betrayal. Because I can imagine you're like me and time is a luxury when it come to watching anime and keeping up with a backlog, I would watch the compilation movies in your position.
If you want to see a Gundam with lots of energy I recommend Thunderbolt or 0083 Stardust Memory (New and older OVAs respectively but very high quality animation). The problem with the OVAs I mentioned is that the stories are with some flaws, you may find yourself either rooting for unlikely characters or just straight up being annoyed at the MC lol. But its good fun and just great sci-fi. I still have a weak spot for 'em.
The thing about Gundam is that you're more a fan of the machines than the characters. That and the fact that there are multiple timelines you need to get straightened out if you want to follow the universe and the history and all that. All the shows I mentioned above are of the UC timeline, which is the original, and therefore most complicated timeline. Best developed timeline however.
The 90s classics like Gundam Wing and G Gundam are more light fare. However, if you want more fluid more modern action (2015-2017), get into Iron Blooded Orphans, that one is dope. And a good story to boot. All of these I mentioned have different timelines so they are more self contained than the ones I mentioned in the first paragraph (lol). Respectively their timeline are AC (Wing), FC (G Gundam), and PD (IBO). These series are perfect if you want the Gundam's top rated quality and action without baggage from the UC timeline.
I'm gonna veer off Gundam here. If you want more condensed mecha action, there's Patlabor: the movie series. The first two are directed by Mamoru Oshii of Ghost in the Shell fame. Those are excellent for a blockbuster feature, and it's police procedural so there's suspense involved.
The Big O is another excellent show, imo if you just wanna get the giant robot/impractical design/1930-1960s vibe. And the production values are awesome. They were also the same production body that helped animate Batman: TAS. Silly story though, just watch the first season of Big O if you wanna dip your toes into the art and characters but don't care that much for the plot.
Whew. I could say more, but for the sake of brevity I say, onward mate. Mecha is a fun fun genre. However, if you want more, I'll shoot! :)
My favorite genres are mecha, sci-fi, adventure and action. But I always keep looking for other shows to prevent fatigue haha Keeps things interesting. I've actually been wanting to explore some of the horror genre as of late, since I like a good scare!
As well, yea I'm going to be watching a lot of the airing ones, just been really busy this week.
