I watch anime for funsies and mindless entertainment so I often avoid series that are dark/depressing, have serious/philosophical themes, or require me to use my brain to figure out what's going on. Most symbolism is lost on me because I'm retarded and I don't appreciate when directors waste my time by creating a convoluted ass plot that requires at least 3 anime rewatchings and 10+ hours of YouTube analysis videos to try and understand what's happening (cough cough eva).
Which is why I tend to binge-watch mostly Slice of Life and Comedy anime along with interesting action/shounen series when I get bored and need some excitement.
In any case, I tend to rate anime pretty generously. Though overall quality of the anime is a factor (animation quality, believability of/number of plot holes, pacing, etc.),
I mainly rate anime based on how much I enjoyed it.

Totally Unbiased 100% Legit Ranking System:
1 - SAO Levels of absolute fucking shit (Yui and the ALfheim Arc are literally the two most retarded things ever conceived in anime.) 2 - Less Repulsive SAO (SAO II is better, if only because it cuts Yui's screen-time and the amount of Reki Kawahara's rape erotica) 3 - Godawful, you'd have to be a hardcore masochist to watch this atrocity, but at least it ain't SAO. 4 - Cringe-worthy, the characters are terrible while the writing relies on the viewer being too retarded to notice how bad it is. 5 - Substandard, I had to force myself to watch it. The anime has 1-2 redeemable qualities but has too many flaws to be remotely enjoyable. 6 - Mid, the anime/characters/story are boring and lack anything interesting that would make me want to keep watching. 7 - Above average, the anime rises above the crowd. I could finish it in a few sittings without getting bored and I'll likely watch future seasons. 8 - Great, the anime had me invested and actively wanting to finish it. High rewatch factor, would love more seasons. 9 - Outstanding, this anime ranks among my Top 30 favorite series. (If that counts for anything...) 10 - The best fucking thing to have ever graced the surface of this godforsaken, turd of a planet.
(AKA my Top 10 favorite anime series + Futabu!!, ( Ν‘° ΝΚ Ν‘°) ππ)
SAO offends me on a deeply personal level and we are all stupider for having watched it.
*whispers* Shit Taste Online
I don't rate any hentai except Futabu!! (obviously a 5/7, such perfect) and Eroge! H mo Game mo Kaihatsu Zanmai (this one is legit higher quality than many anime out there).
I don't rate any anime that I drop unless I managed to sit through approximately half of it or more.
If I disagree severely with the ending of an anime (I'm calling BS on Death Note's, the twin twats Near and Mellow can go succ a dicc) but otherwise enjoyed it, I'm dropping its score down by a point out of spite. I'm a petty person.
Average anime with shit tier animation quality lose a point as well.
Any anime series that once held a place in the Top 10 will retain their score of 10 even if they are bumped down by new arrivals.
Favorite Anime Series:
First "real" (aka not Pokemon, Naruto, etc.) anime I ever watched: Tetsuwan Birdy (1996)
Honorable Mentions:
Of the many series I've given an 8, these are the upper echelon. They weren't able to place on my Top 30 list, however their enjoyment factor exceeds that of the other "Above Average" series and puts them on par with the rest of my favorites. That or they used to be a 9/10 that lacked staying power and was bumped down by new arrivals. (TL;DR any series that I gave an 8.75 or higher I've rounded up to 9)

Sorry to intrude.
I partly have to agree with @Krunchyman.
Anime, back in the days required a lot more resources, rather than some computer programs.
So i believe it is fair to compare it with today's shows.
Regardless, dude hasn't seen shit to judge a mecha show for what it is.
I intentionally chose two anime from the late 80’s to early 90’s to highlight the broader shift from where the industry was, to where it is today. While Japan has ramped up its production of the quantity of anime the consumer receives, it neglects the overall quality of the product, itself. Shows in the 90’s (LotGH, Berserk, NGE, Cowboy Bebop, GitS, Lain, Utena) offered unique perspectives on the human condition, and developed characters who’s actions were, more or less, human. By doing so, their actions/motives fit logically in the context of the story, and, in many cases, drove the story itself, making the experience feel organic, rather than feeling forced through various plot devices.
Nowadays, characters are not really characters, they are tropes to appease the anime consumer. Why, you may ask? Because the anime industry is struggling, due to the prevalence of online piracy. Therefore, to cope with this growing problem, anime studios have shifted from their focus (much like the WWE) to a younger demographic, to capitalize on the sale of merchandise. Dragon Ball Super, for example, wasn’t even a show at all, as each transformation was a ploy for viewers to buy more useless merchandise.
Animation is improving, that is to be sure, but it is simply a cosmetic flourish that detracts viewers from the numerous faults that lie elsewhere.

Hopefully, that answers your question.
