Lots of people say that enjoyment is the most important thing when it come to anime, but where does this enjoyment come from?
Here's some things that I like or dislike about anime that affect my enjoyment.
When it comes to characters I would like there to be a bit of diversity, nothing crazy but I just don't like it when every single character is a high school girl whose personality is defined by hair color.
I also like interesting main characters who are not just self-insert walking planks of wood.
I regard tropes as mostly shortcuts for the writers, something that can be used when convenient but shouldn't be relayed upon.
One other thing that can be annoying in a show is characters with clear plot armor.
Fanservice rarely ruins an anime for me, but it shouldn't be used in any scenes that I'm supposed to take completely seriously.
It only ruins a show for me when it is in the way of the story, like in Maria the virgin witch.
Usually I'm fine with it as long as it doesn't feel out of place.
I don't give one shit about shipping unless there are multiple actually good choices and the MC isn't boring, and even then it's kind of pointless.
In the story of an anime I like high concept stuff, like Cencoroll or Death Note for example.
I prefer fast pacing for story based shows, so that the characters don't get boring.
Slow pacing is for character based shows where I want to get to know all the characters.
It's possible to do both, but that requires more episodes.
The way the story is told is almost as important as the story itself, for me at least.
I really dislike purely dialogue based story telling, if your story is good just show it!
Symbolic storytelling is fine, and can lead to more interesting execution but can also become incomprehensible, which isn't exactly a good thing.
Visual storytelling is the most interesting and impressive one in my opinion.
It takes quite a bit of planning on the writer's director's and animator's part to make it happen properly, which makes me appreciate it all the more.
I'm not that concerned about production values, but who doesn't like pretty visuals?
Music vise I have a pretty broad taste, but I don't like most pop, which is the most common type of insert music to put in an anime, unfortunately.
The only time I notice background music is when it's done very poorly or very well.
That's about all I can think of right now.

10-Here's a bunch of arbitrary requirements!
-has to be completed (the ending has to be view-able in the anime medium)
-has to be at least two years old (to eliminate some of my recency bias)
-I should be able to recommend it to other people (can't be a 10 just for personal attachment)
-Should do something better than other anime I've seen, can be a small thing too (if a better one comes along the current one will drop to a nine).
9-A rejected 10 or a particularly good 8.
8-Great, doesn't fuck up anywhere and executes its core concept well.
7-Some clear short comings, but that doesn't distract from the core ideas.
6-Manages to differentiate itself from mediocre through one or few things that I liked.
5-The more you think of it the worse it gets, but can be viewed as popcorn material/ is generic.
4-Boring, the characters aren't strong enough to carry the story and the story is boring or too slow.
3-Trainwreck, aims for the stars, hits the ground.
2-So bad that it's good.
1-Painful to watch.

I saw your flying witch review. I personally have Tanaka as my Slice of Life show of the season. I believe I didn't see that show in your completed or dropped sections either. I would suggest taking a look at the show.
Another thing that you might want to check out is potentially joining a club called the Anime Guild.
We are a club that specializes in the currently airing season and would be worthwhile consideration to join in on the fun for the Summer Season.
