I like to watch anime mostly because it helps me relax, acts as a stress buster, and provides me with new tracks to listen to!
I like watching comedy, slice-of-life and supernatural anime.
I'd like to see some good mystery shows as well.

I have always loved animated shows. After finishing all of the best of Pixar and Disney and others, I stumbled upon Ghibli, and then I discovered anime music.
For months I listened to various anime tracks (I love to study to piano instrumentals). And one day I heard Goal by Yuki Hayashi. I kept on thinking what kind of a situation was this wonderful track made for, and so I put down my books and started the first episode of Haikyuu!. I saw the scene which I had come looking for (Hinata's Junior High flashback) but went on to finish the whole series, and then the second season as well. So I decided to at least watch all the shows that my favourite tracks were from. Over months I became an anime fan. I started reading a few manga as well. And, here I am.
Things I'd like to finish before I die:
1. Natsume Yuujinchou: read a full reveal of Reiko's past, including the reveal of Takashi's grandpa, and how Madara is connected with it all.
2. Read Season 3 of Dr. Frost (I don't care if it's never tranlated, I will read this)
3. Read and finish manhwa, Moonrise During the Day 4. Read the entire manhwa, The Children's Teacher Mr Kwon
5. Read the entire manhwa, Spirit Fingers
6. Fukigen na Mononokean: read the whole story about Aoi n Ashiya's dad
Cool; glad you liked it. :-) I got the movie version after they completed their Kickstarter to dub it; it's really good, too, but you don't get the OP/ED music between chapters like in the series. There is a bit of added content, including a conclusion where you do learn a tiny bit more about how and why the cafe was started. (Heck, it's such a good anime, I rewatch it a lot. So it's still worth your time, I'd say, to just go watch the film version, even though it's mostly just the series' content put into film form.)

Rikuo's family has an android, Sammy, while Masaki's family does not. Rikuo becomes concerned when Sammy starts behaving unexpectedly, so he and Masaki investigate. As they follow her, one afternoon, she goes into an underground cafe, where the rule is no discrimination between androids and humans. That's where the two boys realize that anyone in the cafe could be either human or android - they have no way to tell here - and that forces them to start questioning their assumptions about the nature of androids and humans and how they ought to be treating both.
The series is short (6 episodes, 15 minutes each with a 30-minute final episode), which was one of your requests, and a lot of it focuses on the day to day lives of its characters - another thing I believe you enjoy in anime. Although the story is science fiction, the focus is on its characters and their stories, so every time I watch it I always find it to be compelling and in places very moving. It's remarkably well made in every way (including cinematography, sound design, music, editing, acting, ...) There's a film version which also received a dub, but I recommend starting with the original subtitled series.

Two recommendations based on stuff already on your list but either dropped or not yet watched.
Eden of the East
Eden of the East is another series that is technically science fiction, but it's more drama/thriller and has a lot of focus on its characters and on . It's a sort of "battle royale" type thing (12 people involved in a deadly serious competition) but has really great character-driven stuff. It's also fascinating "under the hood," as I believe each of its characters represent different facets of Japanese culture, social life or political philosophy. But you don't need to look at that to enjoy the series - it's a fun adventure with some romantic overtones as well, and Saki (our female protagonist) is a strong female character with a good deal of agency and character development.
There are two movies that follow the series and complete it, which I also recommend if you like the series. So overall this is a bit longer than you maybe were looking for, but I think you'll get drawn in and that the time will fly by. When it's over, if you're like me, you'll think "wait, it's over already? That seemed to go so quickly!" :-)
ReLIFE
I know that you dropped this one after one episode and gave it a 6. But I'd invite you to take a closer look; it's one of my favorites, as it's another character-driven series that's well-written and has a lot of solid, poignant character moments. The premise/setup (particularly in episode 1) seems like a stretch, sending 27-year-old Arata back to high school in the guise of his younger self, but rather than the prurient or silly direction one might expect such a setup to take the series in, instead ReLIFE spends a lot of time giving its characters the chance to grow, to learn from their mistakes and learn how to care more about others as well as themselves. Another series with a lot of powerful, moving moments - one reason I really enjoy it - and with a strong female protagonist (who like Arata struggles with her own issues but who also is given good opportunities for growth.) It also makes good use of humor, which is key to balancing the deeper emotional moments. It's also another really well-made series in terms of film-making. I'd encourage you to give it a chance for a few more episodes; if you're not hooked or at least interested enough to continue after episode 3 or 4, I'd be surprised.
