I don't know how it's handled, because I didn't play any of KH games. This one is probably an extreme example and I don't know what to say. I mean, this game was made by Japanese devs and it was originally voiced in Japanese, so I'd go with Japanese. For the same reason that I would watch American Castlevania adaptation in English, despite original games being originally voiced in Japanese (these newer ones that had voice acting). Because it's American adaptation originally voiced in English.
In this video, both characters speak their own respective languages. Kat speaks a made up language which is a mix of French and Japanese while Emmett speaks English.
It has literally nothing to do with original vs dub debate.
There are some situations they have no control over and would have to get their VAs changed. I will not name English examples as they are too many to name, but the Japanese are no exception to this:

This show completely recasts all the members of the ones from 2001. Tohru Honda is not voiced by Yui Horie and instead voiced by Manaka Iwami.
-Hunter x Hunter 2011
None of the VAs of the 1999 original reprised their roles. This has to be done due to the year gap between the original and the remake.
-Lunar Legend Tsukihime
The characters in this show are not voice by any of the VAs in the Melty Blood games. Shiki Tohno is voiced by Kenichi Suzumura instead of Kenji Nojima.
These remakes were created by other studios and completely different people. That's why they are called remakes. Again, It has literally nothing to do with original vs dub debate. Older version has different directors that picked different actors from its time and newer have different staff that picked modern voice actors from its time.
About the later part - if original seiyuu is no longer alive - then I'd rather trust original creators and their choice than foreign dub studio.

Voice actors are a part of this process. Original creators are searching for personalities for thier characters and voice actors are these personalities.
It's not. AT ALL. As I said, the language part in voicing is just one of many aspect that are transferred over human voice.
Try visiting other countries where people don't speak English. Try to interact with them and you will see what i mean. Language is not necessary to understand emotions, personality, mannerism and attitude. In dubs everything is permanently lost.

Um, nope, look above. Language and words is just a small part of acting. That why it's called voice acting.
It's not? How it's exact opposite? Yes, English is original, so if I play this game (I doubt it, because I don't like Ubisoft-style sandboxes), I'll use English voices.
Setting literally doesn't matter. The writing, storytelling, dialogue style etc are still American. This game is nothing but Japanese history presented from Western perspective (and some fuckups that are obvious for anyone who know ANYTHING about these times in Japanese history btw). Same goes to Japanese games like Valkyria Chronicles, where they used al-universe fictional Europe setting, but characters were still acting like Japanese, storytelling was Japanese, dialogue style was Japanese and all tropes, personality types were Japanese. Original acting was infinitely better.
There are single cases when for example Japanese studio is deciding to write the game in English from the scratch (including voices). That's why Bayonetta is great with original voices, because original voices are English, and whole game is written in British English, that's why everything is fitting perfectly. Other examples like this are Resident Evil games or Devil My Cry.

First of all, Watanabe is an extreme western fan. Second thing is - something like this never happened (I mean "original creator prefers the dub"), even Watanabe didn't say something like this.
And no, Bebop is better with its original voice acting. As you stated it's "the opposite of Ghost of Tsushima" - yes, it's highly inspired series by 80s western movies. Told and presented in Japanese way, from Japanese perspective etc.
Dub was never a valid option and it will never be. I can't imagine watching anything foreign dubbed. It always feels fake and just wrong.
And here's my favorite pasta about the dubs:
1. Original voice actors are picked by original staff. They know who would fit the character exactly how they want.
2. Original voice actors are directed by original staff and they have contact with them. They know their characters.
3. Original voice actors lives in source country and they know how to act accordingly to their social standards and traditions.
4. If we are talking about Japanese voice industry, original voice actors are always representing their characters in TV special programs, radio shows. They are often singing in character songs and they are doing it with that particular character voice.
5. Subs are always A LOT closer to original meaning and references. Translators can explain cultural things in notes or just assume that people will be smart enough to understand what is going on. Also, they don't need to rewrite the dialogue to fit with limited time for VA.
6. Subs in most cases don't localize food names, proper names, popculture.
7. Even if subs are wrong you can still hear the original voices and original acting - emotions and many other aspect about human voices are universal and transferred beyond the language layer.
8. Character personalities remains untouched (speech style, catchphrases, politeness, character type and other quirks).

How can people watch the dub? You might as well go buy a McDonald and go and eat it in a Chinese restaurant. The whole point of anime is to watch Japanese animation. If you remove the original language and watch it your own countries language instead you are not going to understand how other countries convey emotion and story through their own traditions. You may understand what is being said but the true purpose of language is to communicate atmosphere through the way it is said. By removing the original language of a anime you are basically stripping the show of it's culture and heritage. Watching a anime, dubbed, defeats the object of watching anime and submersing into anime culture. People want something they can easily access and therefore anime has been dubbed and in the process it's heritage and culture is ignored.When I watch anime, part of the experience is to deepen my understanding of the Japanese culture, and listening to the Japanese vernacular is therefore essential and enjoyable. For a while I can get a glimpse into another culture. Also language has the ability to give the characters personality and individual traits. I prefer to associate characters with their intended original traits, not to become disillusioned with a fake version of personality (or no-personalty) that the dubbed version gives me of each character. It would completely mislead my perception of the characters. This often won't fit the theme. The character's design would not fit their dubbed voice and it would be very corny and awkward. Atmosphere comes from the original language and if you remove this then you are never going to get the true meaning of the show. Watching Cowboy Bebop for example dubbed would be like watching Harry Potter with a foreign dub (if you get my meaning).
This sums it up. I have nothing else to say about the dubs.

If you don't see the similarities between Shield and SAO then... I dunno what to say man. There's probably nothing anyone can do to convince you otherwise. Not that you need the comparison in mind to be able to criticize the show.
