Hey mate, I saw your post at Rec's board and, well, I like those kind of anime (good plot etc) and I got some recs from some users and by digging part of the site. Feel free to lurk around my Anime's list:
Obs: I do care about graphics too, but, for example, I don't think that Cowboy Bebop and Samurai Champloo have bad, old (or whatever) graphics and I really liked them. You should give a try to some of those animes (around 90s ~ 2004s)
Obs²: If you will try CBebop or Samurai Champloo, they are episodic animes. Each episode have it own plot but with clues, parts or anything else (about the characters or the world or whatever) that complements the whole plot/universe of the anime. And then, in the last episodes, they do a great delivery, focusing in all the plot. After all, they're from the same author.
