I watch anime not only because it is entertaining, but especially because it helps me focus. No matter what I watch, I observe behaviours, situations, and any other things you can think of within the scenes, no matter what genre they're from (yes, even ecchi). I see many hidden similarities with the real world, which is how I started to appreciate anime even more.
I think carefully before choosing my next series or movie according to my mood, and I never watch more than one complete series at a time. This inevitably leads me to enjoy what I chose 99% of the time, even if it technically was a bad anime. Combine that with my ratings being mostly based on my "enjoyment" factor, and you'll see why I gave such high ratings. I also tend to avoid having my emotional judgement clouded by unsatisfactory or absurd endings, as well as by controversial themes (*cough* OreImo, Yosuga no Sora). (Please note: Weird anime like Training with Hinako and Tenshi no Drop are rated in a different way)
I suggest that you too try to choose what to watch according to how you feel that day, and I assure you that you'll enjoy even the bad series more.
EDIT: Quite some time after typing that intro, I stumbled across this video that, in the own words of the youtuber, explains from his point of view the same thing I just did. Check it out if you want:
