Hey, learning japanese by anime is really good, especially in Openings and Endings since you hear them every episode again so its a good repetition
To avoid burnout I watch many different stuff and only really binge when its super interesting, when I dont feel like watching its best to do something else like gaming or anything
To track multiple shows I like to use a simple excel table since that works the best for me, that can be used to make a picture with everything you watch in the season which I think is the best way to decide on what to watch :D
