A visual novel (VN) is like an interactive story or book. You get to make decisions, and based upon your decisions, the story changes.
So for Fate/Stay Night, the show is based off of the FS/N visual novel. The VN follows the Fate scenario. There are 3 main scenarios in the VN, which each focuses on a different main girl.
Almost everyone who has played the game and watched the show will agree that the VN is superior to the show.
