I do not list everything that I have seen since I am trying to rewatch a lot too. Trust me, you will see some developments in few days.

Also, excuse me if I sound harsh, it is just how I sound (even in real life), I do not mean anything hurtful by it. It has been a while since I saw an anime that I really enjoyed (I will find it, though).

If you are really looking for a good classic, try The Big O. I think you might like it and it was widely revered as a great anime when I started watching around 2006. Just ask around first.

Also, I noticed that you do not have Dragon Ball listed. I feel that that series is a rite of passage, even if not everyone likes it. Believe it or not, I have good faith in you, you just need to diversify, because you said the right thing but could not back it up all that well.
