Well, I've been watching anime since i was a kid, but I didn't really get into the full swing of it until I got into the 9th grade when my friend brought in an issue of shonen jump, there i read my first manga Buso Renkin. In hindsight it was an awfully silly anime but the action drew me right in and I was hooked. I immediately asked my friend for the next issue, but he said he didn't have it, disparaged I rummaged through the internet for the manga and came across the anime, watching it from beginning to end in basically 1 or 2 days. From there my anime adventure took flight.
Why do I like anime? Well for starters the art style is so beautiful its just so amazing to look at. Anime have a distinctive style that just isn't found in modern day cartoons. Also unlike modern day cartoons the story is an actual story rather than a series of nonsensical episodes that have no effect on the episode that follows it. As well as the stories that anime tell, I love the story (though tired I know) of the sink or swim story where a boy is thrust into an unknown world and the only way to survive is to discover his hidden power from within, and a little action here and there would do some good. Even though my favorite anime's are ones that basically use that tired formula and often fall under the action romance category, it may come to a surprise to you that, my top two favorite animes are nothing like something from the action romance genre, although they are both romance.
I only watch anime in the original Japanese with English subtitles, the only exception being Dragon Ball Z which I watched when I was a kid before I knew it was an anime, and it only seemed right to watch the series in English. Otherwise I prefer the Original Japanese voice actors, something about how most anime are dubbed irritates me, it just seems like the voice actors are overacting, or worse yet, their casting into the roll complete changes how one perceives the character. For example, if a character is supposed to be a Tsundere type, in English they may come across as just being a complete jerk. Not all animes have bad English dubs but I prefer the original Japanese, maybe its because they actually have to go to school to become voice actors, but I just feel like I understand the character better when its in Japanese (ironic I know).
My Top 5 favorite animes are:
1. The World God Only Knows
2. Spice and Wolf
3. Fate/ Stay Night, Fate/Zero*
4. Rental Magica
5. Angel Beats
*I put these both into the same slot because I feel like in order to fully enjoy Fate/Zero you need to watch Fate/Stay Night first, then watch the prequel, however I do feel like Fate/Zero is a far better anime than Fate/ Stay Night, and is more so the reason why it holds the number 3 slot.
PS: For the most part I've only cataloged the animes that I wrote down on my favorites list over the past few years, because if I kept track of every anime I watched I'd run out of paper, so if my ratings seem to be overall higher than average, its because I haven't added any that I didn't add to my list, at least not yet.

I get where you are coming from. I hate waiting for the next episode, it kills me. If you want to watch an anime, check the number of episodes it has and then wait till like majority or all of them are out. I stupidly started watching Danganronpa which is mystery. I am on the last two episodes, but they haven't aired yet and the suspense is killing me.
Dude Index, TWGOK, and Spice and Wolf are among my favorites too. It bugs me that they only let us put five.

Also I would really advise you to go back finish watching those anime you dropped, minus bleach cuz it takes forever. But they are all fantastic, and definitely worth watching.
