I see! It's good you've someone to 'guide you through' because Fate kinda requires it. There's no true watch order either, but I always recommend the following:
- 2006 adaptation, in order to give you bigger appreciation for the other series; (again, a lot of people even recommend to skip this because it's a little mediocre)
- Unlimited Blade Works (UBW), since it's most similar to 2006;
- Fate/Zero, in order to give you a break from the Fuyuki Holy Grail War
- Heaven's Feel (HF), because (being a trilogy of 3 movies) it feels a little more 'grandiose' as finale, + it links more to Zero than UBW / 2006 do.
If you're giving 2006 a 7/10, you can probably look forward to thinking all the others are at least 8/10s!
Especially the animation gets a major boost (and with that, the fight scenes).
I was just randomly profile hopping and noticed you were in progress with Fate/stay Night and felt like leaving a comment.
I hope Fate/stay night (2006) doesn't turn you away from the future Fate material. Unlimited Blade Works, Heaven's Feel and Zero are all much better,
and most people even flat-out would tell you to skip the 2006 version. In my opinion, watching the 2006 version will give you an even better appreciation of the other versions (especially Unlimited Blade Works, which is pretty similar at the start).
