If you like Sora yori mo Tooi Basho because it is so inspiring, you should consider watching Uchuu Kyoudai. It's also on my bucket list (I also love yorimoi) and it is rated pretty well. It is also a story of someone trying to reach an unachievable goal.

Thank you! Considering how much anime you've watched, it'll be hard but I'll let you know if I come across an anime. Try K-On!, the Season 2 is very good. The bonds between the characters are very interesting but it's different from yorimoi since K-On characters don't have a grand sense of purpose (like going to Antarctica) but its more heavily focused on friendship. Enjoy!
