MAL isn't updating properly so I can't see Spice and Wolf on your list.
It really depends what type of 'good graphics' you want. Older series do not necessarily have any less details than modern ones although CG tends to be missing or weaker. If you are looking for just CG, then half the following list won't apply. Most of these will be several years old since I've barely watch anything new in the past few years.
Gankutsuou is an artistic masterpiece (a completely unique style of artwork I have yet to see in any anime, or anything in general), putting a twist on the classic novel, "The Count of Monte Cristo".
Seirei no Moribito is beautifully drawn, with one of the best (as short as they are) fight scenes in any anime. That said, it is fairly slow and its not for everyone. Much of it has a slice of life feeling.
Ergo Proxy is another one, though it is fairly dark and moody.
If you are looking for CG, most newer gundams (Seed onward, though if you compare to IS, probably 00 onward) have large budgets and tend to have beautiful CG.
Nausicaä of the Valley of the Wind, despite being a REALLY old movie, is incredibly drawn with very minute details.
Last Exile is fairly well drawn and a rather unique storyline. Though that said, the only thing I've listed so far that really has overly used storyline is Gundam.
Soukou no Strain, being a mech series, also has a lot of CG. A little old compared to IS, but better story. Zegapain is also a 5 year old mech series, but better story (ok... kind of like a matrix clone) and mech.
