My List
I've watched ca. 230 individual TV and ONA series (not counting prequels and sequels on my list), ca. 200 individual movies and ca. 180 individual OVAs (not series-related movies or OVAs) on my journey as an anime fan.
Why so many anime and manga? Uhm, because I'm old. Also, I'm watching like 5 - 15 TV / ONA anime series + some OVAs a year. So, that really adds up after 25 years.
Why so many dropped anime? I look into lot of anime in a new season and drop like 80-90 % (very) soon, and decide on the first impression if I want to keep them. Although I don't add the bottom of the barrel anymore, anime where I can't even go through one episode.
Also I drop most anime and manga that I'd rate below 6.5-7.
To put it short: I dislike most of the otaku-y shows and I don't love anime per se, I love animation.
I'm not adding all music videos, since they are bloating my list even more (sadly).
Please do not recommend something to me, I always got a lot of anime to watch and manga and novels (also western ones) to read. For Secret Santa: Please only recommend me entries from my paused- or my plan to watch-list.

Never Watched Much Of / Not Fond Of Series Like ...
One Piece, Naruto, Bleach, Fairy Tail, Hero Academia, Demon Slayer, Black Clover, Fire Force ... lot of lengthy and popular battle shounen, with a few exceptions.
Never liked ecchis, harems, most moe, isekai & romcom series, etc.
To be honest, I think ~ 80 % of anime, manga and light novels are quite bad to ... abysmal, yet there are great ones out there as well.
In theory I love horror and dark fantasy, but often it's just laughable edgy. So I rather like dark and creepy atmospheres and worlds. I can't stand too edgy characters and plots and can't take them serious (already had my issues with Eren of some kind).
Also I love romances, but I'm quite picky as well.
There are great female and queer characters in anime too, but I can't stand it, when they are just harem inventory or older teenage / adult characters, who act and look like a child.
What I (Dis)Like In Characters
In general I like various types of characters, except bland slates, edgelords & co.
Also I'm not fond of "strong independent women", who are just acting like a bratty and rude teenager, like a macho man or look down on other women. This is mostly an issue in some western life action and animated shows.
For and foremost I like kind characters, who feel real and manage to be kind and have depth without coming across as saints or goodie-two shoes. I'm so tired of shows, where everyone is awful to another, but I'm also tired of superficial portrayal of empathy and kindness.
In general I like complex and fun characters with different sides to them and I like good-natured people, who fucked up in some way or another and get some interesting (inner) struggles to deal with.
Also I like (often powerful or influental) characters, who have to deal with the responsibility coming with their power and position they are in.
I'm really fond of - especially - intelligent women and non-binary characters with strong passions, and in general I like competent characters. Also it's great to see characters, who I can interpret as neurodivergent, without them being the antisocial and "robotic" stereotype, portrayed as pitiful or similar.
For most parts I prefer older characters, but there are also kid or teenage characters I like.
