Well Arc 5 and Arc 6 of Re:Zero which not adapted is definetely better than current arcs however that doesn't change the fact current arcs are flawless aswell with information we got in future seasons. Season 1 is perfect because it doesn't have any coincidences, if Roswaal wasn't target Subaru he wouldn't have died. You said Return by Death is plot armor which is funny because if Subaru hadn't have RbD he wouldn't have targeted therefore he wouldn't die aswell.
There is so many layers in writing connects everything perfectly which is why i saw Re:Zero is not just best isekai but also best japanese fiction. It gets better each arc but there isn't single bad or mid arc in entire storyline. Even Arc 1 which is weakest of Re:Zero gets a lot more sense after learning some characters motivation stacked with mysteries.
5 Seasons is not long, just main story will be like 10 Seasons and they can make 10 Another Seasons from just side stories.
Rem was gone during Arc 3 which same arc confession happens. It seems you failed to understand the show you watch. It was foreshadowed and written in 2012 before Rem even got popular. Why you think Subaru has to explain blank letter?
